Vegan Chick Pea Curry with Basmati Rice

Verda Spicy Vegan Chickpea Curry


  • 2-4 servings basmati rice
  • 1 tbsp coconut oil
  • 1 large diced organic onion
  • 1 organic garlic clove
  • 1 1/2 tbsp garam masala spice
  • 1 can Chick Peas
  • 2 cups (16oz) unsalted crushed organic tomatoes
  • 2 cups organic spinach
  • 1/2 cup coconut milk Greek style yogurt
  • 1/2 teaspoon Himalayan salt
  • Black pepper to taste


  • Cook rice and set aside
  • In a large skillet heat coconut oil over medium heat. Saute onion for 5 minutes
  • Add garam masala spice and stir well; cook for 30 seconds
  • Add chick peas, spinach and crushed tomatoes. Cook until spinach is wilted
  • Stir in Himalayan Salt and Greek Yogurt
  • Serve over rice!
