- 2 cups of spinach
– 1 cup of black bean and lentil taco filling (see Black Bean and Lentil Tacos)
– 5 cherry tomatoes (halved)
- 1/4 avocado (diced)
- A handful of tortilla chip (crushed)
– a sprinkle of Daiya vegan cheese
- drizzle of hot sauce or salsa
Heat up taco filling and layer ingredients as listed in a medium sized bowl. Garnish with other ingredients as desired.
