Fudgy Protein Brownies with Pistachios and Goji Berries



– 1 cup applesauce, unsweetened
– 1/2 cup almond/rice/soy milk, unsweetened
– 1/4 cup coconut oil, melted
– 2 tbsp brewed coffee
– 1 – 2 tsp pure vanilla extract
– 5 pitted Medjool dates or 1 tbsp stevia
– 1 scoop Chocolate Verda Superfood
– 1/2 cup almond meal
– 1/2 cup cacao powder
– 1/4 tsp salt
– 1/4 tsp baking soda
– 1/2 cup goji berries
– 1/2 cup raw pistachios, shelled

1. Preheat oven to 350 degrees F and line 8″ x 8″ baking pan with parchment paper.
2. In a food processor or a powerful blender, add all ingredients in the order listed above (except for pistachios and goji berries) and process until smooth, pausing and scraping down the walls.
3. Stir pistachios and goji berries into the batter and mix evenly.
4. Pour batter into prepared baking dish, level with spatula and bake for 30 minutes. Remove from the oven and let cool 15 minutes. Cut into 16 squares and dust with coconut or almond flour if you wish. Best served warm. I microwave mine for 10 seconds.
